The Mill
We produce and bottle our own Extra Virgin Olive Oil, exclusively made of the olives coming from Cortijo El Tobazo.
Olives enter the production process within two hours of being harvested from the olive trees. Once in the factory, olives are classified by quality level in different areas of reception. This way, we extract the olive oil coming from the different qualities from organic olives separately, guaranteeing an Extra Virgin Olive Oil production with the highest quality.
The mill is completely cleaned up after production of the Extra Virgin Olive Oil every day, until it is in perfect conditions for the following day.
THE OLIVE OIL CELLAR
Once the olive oil has been extracted, it is stored in the cellar under optimum preservation conditions (light, temperature) and preserved in an inert atmosphere of nitrogen; this way, their aroma, flavor, naturals antioxidants and vitamin complexes stay immutable.
Each tank is identified by a lot number, allowing the traceability of the Extra Virgin Olive Oil contained; that is, the area where the olives were harvested from, date of harvesting and milling, and the results of the chemical analysis and organoleptic tasting.
